Sunflower Salad with Cod Liver

This salad is always gorgeous and incredibly delicious — and so good for you! Today I felt like making the classic "Sunflower" salad with cod liver. I usually make it with black olives, but this time my husband happened to grab green ones instead. No big deal, though — I had a can of corn on hand, and it turned out just right!

    Here's the star of the show! Drain off almost all of the oil — cod liver is very rich on its own.

    Here are the ingredients for the salad. I boiled the potatoes and eggs ahead of time and peeled the onion.

    Finely chop the onion.

    Add the sugar and vinegar, pour in boiling water, and set aside to quick-pickle.

    Grate the potatoes.

    Spread them over a serving dish, lightly salt, top with mayonnaise, and mix.

    Layer them over the potatoes and spread with a little mayonnaise.

    Mash the cod liver with a fork.

    Top with the onion, which has had time to pickle.
