  • Adjika is a type of spicy condiment. For winter, I always put up plum adjika rather than the classic version. It makes a great accompaniment to just about any dish. On top of that, food with a dab of adjika boosts your metabolism and aids digestion, and it even has antiviral properties. There are all sorts of recipes for adjika, each with its own distinctive, original flavor. Here we invite you to try one of the more exotic combinations — plum adjika. For this one, it's best to use sour plums, like cherry plums, so the adjika doesn't end up too sweet. Grind the plums, garlic, and peppers. Then add the sugar and tomato paste and season with salt. Cook the mixture for 20 minutes, stirring constantly. Then spoon it into pre-sterilized jars and seal them. Plum adjika comes out sweet, sour, and spicy all at once — a perfect condiment for meat dishes, and one that always comes in handy in winter.
