Pineapple, Peach, Kiwi, and Cranberry Canapés

  • Making fruit canapés is very simple and even fun. The younger members of the family will surely be glad to join in this pleasant task. So, get the ingredients and skewers ready in advance, along with any decorations — beads, for instance — or just use pretty pre-decorated skewers. Peel the peaches and cut them into cubes about 1.5-2 cm on each side. In the cold season you can use canned peaches, but you'll need to peel them too, and they should be firm and dense so they don't fall apart into mush. Gently place the peach cubes in a bowl. Peel the pineapple and cut it into pieces the same size as the peaches. Put the pineapple cubes in another bowl. Prepare the cranberries and place them in a separate bowl as well. Fresh cranberries are best; if they're frozen, take them out of the freezer ahead of time so they thaw naturally. Peel the kiwi by cutting off a thin layer of skin. Cut the flesh into cubes the same size as the other ingredients and put them in a separate bowl — do this very carefully. You can leave the cut kiwi pieces right on the cutting board. Now for the most fun part — threading the fruit onto skewers: first a cranberry, pierced gently through the center, then a piece of kiwi, then peach, and a piece of pineapple at the bottom. Arrange the finished canapés on a nice wide platter. Garnish if you like — with fresh berries, mint sprigs, physalis, and so on. Enjoy, and happy holidays!
