- Make the jelly. Soften the gelatin in half of the water, stir, and leave it a few minutes to swell. 2. Pour the rest of the water into a saucepan and add the sugar. Set it over medium heat and warm until the sugar fully dissolves. Add the bloomed gelatin and stir constantly until smooth. As soon as the gelatin has dissolved, take the pan off the heat — never let it boil. Pour the sweet dessert wine into the sugar syrup (red is best, to complement the cherries) and stir well. 3. Set out 8 dessert glasses. Pour a bottom layer of the jelly into each and refrigerate until set. 4. Pour cream with at least 33% fat into a mixer bowl, add the vanilla for aroma, and whip on high speed to stiff peaks. 5. Pulse the chocolate cookies in a blender at low speed to crumbs — not to powder. Melt the coconut oil in a water bath or the microwave and pour it over the cookie crumbs. 6. Rinse the cherries, pat dry, halve, and pit them. If you're using frozen cherries, thaw them first and drain off the excess liquid. 7. Once the jelly has set, start layering the dessert. Divide the cookie crumbs and the whipped cream into 2 portions each, since their layers repeat. Spoon the first portion of cookie crumbs over the set jelly. Next add half the whipped cream, then the cherries, followed right away by another layer of cream. Finish with the remaining cookie crumbs. 8. Decorate the finished trifles with small meringues, cherries, and melted dark chocolate. Enjoy!
