Baked Salmon Rolls

    1. Cook the rice according to the package directions, then season it with salt, sugar, and rice vinegar. 2. Stir together the soy sauce, the smoked capelin roe, and half of the soft cheese. 3. Cut the salmon and cucumber into sticks. 4. Spread the rice over a sheet of nori, lay on the fish, cucumber, and soft cheese, and roll it up tightly with a bamboo mat into a firm roll. Slice it with a sharp knife into 6–8 portions. 5. Line a baking sheet with parchment and arrange the pieces on it. Top each one with a teaspoon of the roe sauce and a little soft cheese, sprinkle with sesame seeds, and bake in an oven preheated to 350°F (180°C) for five minutes. Serve the rolls right away, while they're hot.
