Cooking method
- My little niece is a world-class picky eater. Keeping her busy on a walk or with toys at home is one thing, but feeding that spoiled little girl is a whole different challenge — and since my sister leaves her with me now and then, I had no choice but to crack it. One day, after trying everything, I figured that since she has such a sweet tooth, her food should be simple, filling, and sweet — something I'd loved myself as a kid. I ran through recipes in my head and landed on the answer. Lithuanian cooking has a dish that's about as kid-friendly as it gets, one that often shows up on kindergarten menus: sweet fruit soup. I used to eat it happily myself when I visited my Baltic relatives. And it couldn't be easier to make. Soak dried fruit in warm water — prunes, dried apricots, apples. Don't feel limited to that list; add any other fruit or berries your child loves. After about fifteen minutes, rinse the fruit and add it to a pot of boiling water. Stir in sugar to taste, though I wouldn't make it too sweet. Now make the dumplings: whisk together about 2 eggs, half a cup of flour, and a little water so the batter isn't too thick, plus a pinch of salt. Drop small spoonfuls of the batter into the pot with the cooked fruit. Add a tiny pinch of cinnamon — just a little. The dumplings cook fast, so simmer another 5–10 minutes and the soup is done. Serve it cooled to room temperature with a spoonful of sour cream. So tasty and satisfying. This sweet fruit soup became my niece's favorite, and now she's always happy to come visit.
