Salad of sprouted buckwheat apples and beets

Cooking method
First prepare the avocado sauce:
1. Peel the avocado.
2. Chop the onion coarsely.
3. Put the avocado and onion in a blender bowl.
4. Add lemon juice and olive oil.
5. Chop everything into a puree, then put it in the refrigerator.
Now we are preparing the salad itself:
6. Cut the apple into small cubes, put it in a salad bowl.
7. Peel the beets and rub them on a coarse grater. Add it to the apple.
8. Put the sprouted buckwheat in a salad bowl. Mix everything together.
9. Put avocado sauce on top.
10. Garnish with fresh herbs.
