  • Any red fish (smoked, of course) works for this Russian dish — pink salmon, coho, chum, sockeye, and so on. In fact, this kind of smoked-fish salad is often called "Amur," and the Russian Far East is considered its home. The magazine where I found this recipe said that Far Eastern home cooks often make it for various holidays. What's more, it's even served in restaurants. I think that's a very good reason to try making this salad. To make it more delicate, we start by pickling the onion. Cut it into rings, cover with hot water plus vinegar, sugar, and salt, let it sit for about 20 minutes, then lift it out of the water, squeeze it, and let it cool. Cut the fish into thin, wide slices and the tomatoes into thin wedges. Mix the onion, fish, and tomatoes, add the green peas, and pour over the vegetable oil. Let the salad sit for a while to soak well. By the way, the recipe suggests using a fragrant vegetable oil — one that smells of sunflower seeds. Though that's a matter of taste.
