Tartar Sauce with Cucumbers, Mayonnaise and Green Onions

This wonderful sauce gives a fresh, delicious twist to any dish! The classic method for tartar sauce is the technique of making an emulsion — except the base here, unlike regular mayonnaise, is a cooked egg yolk rather than a raw one. Green onion is the one must-have component. Optional but popular add-ins are chopped pickles, garlic and capers.
