Classic Paella

  • Start with the seafood: fry the shrimp and mussels in half of the olive oil (the shrimp are done when they turn a nice orange, and the mussels are ready once they open). Transfer the cooked seafood to a plate, then add the octopus, cut into pieces, to the pan and fry until it darkens. Now the vegetables: dice the red and green peppers and the onion, and chop the parsley. Sauté the vegetables in the remaining olive oil along with the garlic for about 2–3 minutes, then pour in the wine and let the excess liquid cook off, stirring. Here's the fun part: return the fried octopus to the wine-and-vegetable mixture, add the rice and saffron, and keep it over low heat until the rice absorbs all the liquid. Now stir in the tomato paste, the small shrimp, and the scallops, season with salt, and mix. Time to transfer everything from the pan into a rimmed cast-iron pan (or any other ovenproof dish). Arrange the large shrimp, mussels, and tomatoes (cherry, if you like) on top, pour the broth over everything, and slide it into an oven preheated to 350°F (180°C). Bake the paella for about 20 minutes. If any liquid remains at the end, set the pan over a burner and let it cook off. About 5 minutes later, serve it up, garnished with wedges of lime (or lemon).
