Classic Meat Salad

A simple, hearty vegetable salad with boiled meat. Meat salad can be made all year round. Every cook has the ingredients on hand. In winter you can use what you have stocked, and in summer you can make it with the fresh harvest — new potatoes and lightly salted cucumbers.

    How do you make a classic meat salad? Boil the vegetables until tender ahead of time and let them cool. Peel the boiled potatoes and cut them into small cubes. Put the diced potatoes in a deep bowl or salad bowl.

    Peel the boiled, cooled carrots, trim the ends, and cut them into small dice. Add them to the salad bowl with the diced potatoes.

    Take the pickles out of the jar and trim the ends. Finely dice them and add them to the other chopped vegetables. You can use either salt-brined or vinegar-pickled cucumbers.

    Peel the boiled, cooled eggs and cut them into small dice. Add the eggs to the other chopped ingredients.

    Finely chop the boiled, cooled meat — beef, pork, turkey (or chicken if you prefer) — and add it to the salad.

    Carefully open the can of peas, drain the liquid, and add the amount of peas you need to the salad.

    If you like, add regular or sweet onion to the salad. Peel it and chop it very finely. If the onion is very sharp, you can scald it with boiling water first. Add the chopped onion to the salad.

    In a separate bowl, combine equal parts sour cream and mayonnaise and stir. You can add ground pepper if you like. Salt the salad to taste, dress it with the sour cream and mayonnaise mixture, and stir.

    Serve the finished salad chilled, as a dish on its own or as a cold appetizer with the main course.
