Cod Liver and Rice Salad
A really hearty salad that can easily stand in for a main course! Canned cod liver has been a staple of countless recipes for years, salads especially. While it spreads beautifully on bread for sandwiches, it's still quite rich, so it isn't recommended for people with chronic liver or gallbladder conditions. But trust me, it's delicious — really delicious. In a salad you can mask and spread out that extra richness, especially when there's rice involved, since rice happily soaks up the fat.

- How do you make a classic cod liver and rice salad? Boil the rice until done, but don't overcook it — the grains should stay intact. Drain it in a colander and rinse with cold water to cool. Slice the onion into thin rings. Cut the tomatoes and pickles into cubes. Cut the lettuce leaves into thin ribbons. Put everything in a large bowl. Finely chop the eggs and the cod liver. Add the green peas (drained) and the cooked rice to the bowl. Dress it all with the oil from the canned cod liver. Add salt, pepper, and chopped herbs, and toss gently. Mound it into a salad bowl and garnish with tomato wedges and sprigs of dill and parsley.
