    1. Pour about 200 ml of water into a pot, add the rice and a little salt, bring to a boil, then cover and cook over low heat for 20 minutes; let it cool.
    1. Blanch the snow pea pods in lightly salted boiling water for 1 minute, and do the same with the corn, cooking it a little longer — 3 minutes. Cool the pods and corn in ice water to stop the cooking quickly.
    1. Core and seed the bell pepper, wash it well, and cut it into strips. Halve the snow pea pods and cut the baby corn into thirds.
    1. Wash the green onion and chop it with a knife. Drain the bamboo shoots and cut them into thin strips.
    1. Peel the ginger root and grate it on a fine grater. Stir the rice vinegar, soy sauce, and sunflower oil into the grated ginger, mix well, and season with salt.
    1. Combine all the ingredients in one bowl, drizzle with the dressing, and toss gently.
  • Spoon the salad into portions and sprinkle with cashews just before serving.
