Vegetable Minestrone Soup

A delicious Italian soup — make it and see for yourself! I adore Italian cooking for its boldness and its riot of flavors. Minestrone is a wonderful tomato-based soup. I love it for its rich, vivid taste, and made with vegetable broth it comes out very light yet plenty filling. It's my family's favorite soup!

  • If you're using dried beans like I do, soak them for 2–3 hours in cold water first to speed up cooking. Unsoaked beans take longer to cook. To save time, you can also use canned beans.
    1. Cover the beans with cold water by about 2 cm (¾ inch) and set them over the heat. Bring to a boil over high heat, then reduce to moderate and cook until tender. Drain the liquid (or save it to use as broth, if you like).
    1. While the beans cook, peel and wash the onion and carrots and cut them into small cubes. 3. Wash the broccoli, break it into florets, and cut those into small pieces too. 4. In a large pot or deep skillet, heat the olive oil, add the chopped onion, carrots, and broccoli, and sauté for a few minutes. 5. Peel and wash the potatoes and cut them like the other vegetables. 6. Dip the tomatoes into boiling water for a few minutes. Peel off the skins and remove the seeds, then dice the flesh. 7. To the sautéed vegetables, add the prepared tomatoes and potatoes, the tomato paste, the chopped parsley, and the finely grated garlic. Pour in the broth. 8. Season with salt and bring to a boil over high heat. Cover, reduce the heat, and simmer for 10–15 minutes, until the vegetables are soft and nearly done. 9. Add the pasta and beans and cook another 5–8 minutes, until the pasta is done. Serve the minestrone hot with Parmesan grated over the top. Enjoy!
