Apple-Tomato Juice for Winter

Love tomato juice? You can make it with apples—delicious! Homemade juices are a big favorite in our family—fruit, berry, and vegetable alike. One of the very best is apple-tomato. I put it up without spices for the kids and with spices for the grown-ups. Jars of this juice never even make it to midwinter—it's all gone long before that :) So good.

    1. Wash the tomatoes, cut them into quarters, and purée them in a blender (or run them through a meat grinder). If you have a juicer, you can simply use that—then the juice will be seed-free and you won't need to strain it through a sieve afterward. 2. Cut the washed apples into wedges and run them through the juicer too, or use the blender. 3. Combine the tomato and apple juice in a pot and add the salt, sugar, cloves, and bay leaf. 4. Set the pot over medium heat and bring it to a boil. 5. Once the juice boils, simmer it over low heat for 15 minutes. You don't have to skim the foam—it will settle on its own as it cooks. 6. Remove the spices. If you didn't use a juicer, pass the juice through a sieve (if you'd rather not have seeds in the finished drink). 7. Return the strained juice to the stove and heat it for another 3 minutes. 8. Pour the hot juice into sterilized jars or bottles, seal them, wrap them in a blanket, and let them cool upside down. Store the juice made by this recipe in a cool place.
