- A very intriguing recipe, to my mind, for a wonderful dish — Kryvyi Rih cold borscht. It's lovely summer food: healthy, wholesome, and just right for anyone hoping to lose a little weight. Start by shredding the cabbage and cooking it in boiling, lightly salted water. Once the water boils, add the diced potatoes. While the potatoes cook (about 15 minutes), boil the beans in a separate pot. Cut the bell pepper into half-rings, seeds removed. Cut the beets into matchsticks and stew them in a skillet with vegetable oil, vinegar, and tomato paste. In a separate pan, sauté the onion, the coarsely grated carrot, and the parsley root. Sprinkle in the flour, let it color slightly, then add a little water. Add the beans, peppers, stewed beets, and the carrot-and-onion sauté to the borscht. Let it cook about ten minutes. Taste, then salt and pepper as needed and add a little sugar if you like. Cool the borscht and then chill it in the fridge. Serve each bowl with fresh herbs and a spoonful of sour cream.
