Step 1:
Salt is dissolved in cold water and oil is added. Flour is sifted on the table next to it.

Pouring flour into the water, knead the dough. Depending on the temperatures, the quality of the products, the humidity of the air, the mood of the hostess and the location of the planets, the dough can take more or less flour.
Step 3:
Knead the dough first in a bowl.

Then move the dough to the table. Kneaded with a fist - the video shows very well the age-old skill and love for the dish. Be sure to take a look.

The dough is folded in half and kneaded into a flat cake with a fist.
Step 6:
This is repeated many times.

Then, using a long thin rolling pin, the sticks begin to roll out.
Step 8:
Wrap the dough on a rolling pin not very tightly and roll, slightly stretching the dough with your hands to the sides. They say that this is how the dough rolls itself.
Step 9:
When the table became small, the dough is ready. It should be thin, but in moderation, so that it does not tear when modeling and cooking. The dough is folded into several layers. This is also well shown in the video.

Cut across the folds.

When the dough is unwrapped, long ribbons are obtained, 5-7 cm wide. The tapes are stacked on top of each other.
Step 12:
Now cut into squares. The basics for manta rays are ready.

Chopped meat (lamb) with onions is used for filling.

Mantas are prepared in steam cookers (mantyshnits, cascades) by greasing discs with steam holes with oil. They say that before extracting manta rays, you need to sprinkle them with water - they come to life and become very attractive in appearance.
