  • I learned to make this Greek dish in my early youth. I always loved shrimp and would collect any clippings from newspapers and wall calendars that had recipes for them. That's how I ended up with this easy recipe, and now I make cucumber-carrot shrimp salad all the time. It's simple to prepare, and the flavor is absolutely wonderful — which is why it's one of my favorites. I put frozen shrimp in the microwave on defrost for about fifteen minutes, then peel off the shells and pull the shrimp apart into strands. Meanwhile, I boil the potatoes and carrots together in one pot. Once they're cooked and cool enough, I cut them into small cubes. I dress half the vegetables with mayonnaise and mound them in the center of a dish, then arrange the shrimp on top. Around the rim I set the remaining potato and carrot cubes. I chop some dill and sprinkle it over this Greek culinary marvel. You can treat yourself to a little celebration anytime there's a package of shrimp in the freezer and this cucumber-carrot shrimp salad recipe on hand. This kind of food rarely leaves anyone unmoved, and seafood lovers are downright delighted, going back for seconds and thirds.
