- Dice the pork belly, celery, carrots, and onion, and finely mince the garlic. 2. Fry the chopped ingredients in olive oil for 7 minutes. 3. Add the ground beef and fry for another 5 minutes. 4. Stir in the tomato paste and keep frying for 5 to 7 minutes. 5. Choose a heavy-bottomed pot with thick walls for stewing. Transfer the contents of the skillet into it, then add salt and pepper, the tomatoes, and the chopped herbs — basil, thyme, and oregano. 6. Pour in the wine. The liquid should cover everything by about an inch; if it doesn't, top it up with water or broth. 7. Bring the Bolognese to a boil, lower the heat, and simmer for about 60 minutes. If the tomatoes turn out sour, add a little sugar to taste. Use the Bolognese however you like. Enjoy!
