Gumbo

A famous American classic for dinner? It's easy — give it a try! Gumbo is made all over the U.S., especially in Louisiana. To be honest, I've never been there and never tasted the real thing — only versions at local restaurants — but this recipe comes out just as good :) It's delicious, deeply flavorful, fragrant, and a little spicy. My family loved it, so now I make it from time to time. I use frozen okra.

    1. Wash the bell pepper, remove the stem and seeds, and cut it into medium pieces. Peel the onion and cut it into half-moons or just small pieces, however you like. Slice the washed celery into pieces and chop the peeled garlic. If the okra is fresh, trim off the stem end, pare around it, and cut it into rounds. Drop the tomatoes into boiling water for half a minute (score them with a shallow X first), peel them, and dice them. 2. Peel the shrimp and cut the sausage into strips or cubes, as you prefer. 3. Heat a heavy-bottomed pot over moderate heat. 4. Pour in the vegetable oil, add the flour, and stir. Keep it on the heat, stirring constantly, until the mixture turns golden brown — this takes about 5 minutes. This is the key step that gives gumbo its distinctive flavor (it's the roux). 5. Add the prepared green bell pepper, celery, and onion to the roux, then the garlic. Stir and cook until softened, about 3 minutes. 6. Pour in the chicken broth and stir well until the mixture is thick and smooth. 7. Add the shrimp, sliced sausage, tomatoes, and okra to the pot. 8. Add the herbs and spices: oregano, thyme, paprika, cayenne, and salt. Taste for salt and add more if needed. 9. Simmer the soup over low heat for 10 minutes. 10. Chop the green onions. 11. Ladle the gumbo into bowls and top with the chopped green onions and freshly ground black pepper. Your gumbo is ready — serve it straight from the stove, hot and fragrant! Enjoy!
