Minestrone Soup with Beans

  • I make this soup in a slow cooker, but you can also use a multicooker on the "Stew" setting, or a regular stovetop over low heat — just cut the cooking time in that case. Dice the carrots and onion and add them to the slow cooker. Add the chopped celery, crushed garlic, tomato paste, and tomatoes, plus the dried thyme. Season with salt and pepper and stir. Add water (or broth) to reach the consistency you want. Cook for about 4 hours. After that, add the canned beans and the whole wheat spaghetti. Chop the spinach and add it to the soup. Keep cooking for another 45 minutes. Check the vegetables and spaghetti for doneness. Serve the minestrone sprinkled with grated Parmesan and finely chopped fresh herbs. Enjoy!
