    Gather what you need: boil the potatoes (in their skins), the eggs, and the carrots. Clean the sprats down to fillets. Rinse and dry the herbs. Drain the peas and olives.

    Dice the fresh cucumber. I left the skin on, but if it's too tough, it's better to peel it.

    Halve the fresh tomato and scoop out the seeds — you can save them for another dish.

    Dice only the meaty walls into the salad, which keeps it from getting watery. Save a little tomato for garnish.

    Put all the chopped ingredients and the peas in a deep bowl, add mayonnaise, salt, and pepper, and mix well. Go easy on the salt — the salad also has salty olives and salted sprats.

    Finely chop the herbs, sprinkle them over the salad, and garnish with olives and pieces of fresh tomato.

  • I've known this simple recipe since childhood — my grandmother used to make it. Here it is, with a few little tweaks of my own. Sprats are so much tastier turned into a salad. This one is a great match for potato dishes, especially mashed potatoes, though it's just as good on its own. Mound the salad in a bowl and decorate it with sprat fillets, egg slices, green peas, tomato, herbs, and olives. And it's ready to eat. Best of all, it comes together fast and is not only delicious but cheap. Enjoy!
