Sprouted Wheat Salad

  • Heat the olive oil and butter in a heavy-bottomed skillet. To flavor the oil, add the garlic cloves, let them sizzle for 30 seconds, then remove them. Add the asparagus, peas, and mushrooms, then season with salt and pepper. Cook for 10–15 minutes, stirring gently with a spatula. Put a generous portion of sprouted wheat berries in a bowl, dress it with the tahini and pesto, and add the contents of the skillet along with the finely chopped fresh herbs. Scatter in the sesame and sunflower seeds. Sprinkle with freshly squeezed lemon juice and toss to combine. Top with the hard-boiled eggs, cut into pieces.
