Tom yam is a shrimp soup from the cuisine of the peoples of Thailand. Ideally it is simmered on a broth of herbs: galangal root, lemongrass, lime leaves, kaffir. You can find a ready-made set of ingredients in supermarkets. But each component can be replaced without harming the dish. Instead of kaffir, lemongrass, galangal root and lime leaves, take ginger root and ordinary lemon leaves, chop them and add to the boiling water. The base of the tom yam dish is ready.

Helpful tips:
• For tom yam it's best to use champignons or oyster mushrooms. Our wild mushrooms have too rich a flavor for Thai cuisine and overpower the delicate aroma of the dish.
• Coconut milk is easily replaced with regular cream.
• For an experiment, you can add red fish, octopus or mussels to tom yam soup.
• If no lime is on hand, the juice of half a lemon will fill in nicely.
